Cinnamon Oatmeal Energy Bites
Hi friends! Hope you’re having a great week so far! I am midway through the first week of my Low FODMAP food journey, and I’m surprised it hasn’t been too bad. While I miss my favorite foods like apples and avocado, I’ve been making due and finding other low FODMAP approved foods that I love.
I have been doing a lot more meal prep than usual, which has been helpful (batch-cooking quinoa, veggies, snacks) and keeping my fridge stocked with low FODMAP ingredients. I whipped up these Cinnamon Oatmeal Energy Bites which have been FUELING me the past few days. I make these, store them in a air tight container, and keep them in the fridge for 5-7 days. Enjoy!
Ingredients:
1 cup gluten-free rolled oats
½ cup almond butter or peanut butter (almond butter is low FODMAP in smaller amounts. I included it in this recipe knowing I wouldn’t eat the entire batch at once.)
¼ cup hemp hearts
¼ cup coconut shreds (unsweetened)
1 tablespoon maple syrup
½ tablespoon cinnamon
1 teaspoon vanilla extract
¼ teaspoon salt
Preparation:
In a bowl, combine all ingredients. Mix well to ensure all ingredients are fully incorporated.
Allow mixture to firm in the fridge for 1 hour before forming balls
Form mixture into 1-tablespoon balls, packing them tightly to ensure they hold together.
Store in air-tight container for 5-7 days in the fridge.
