Banana Blender Pancakes

I am all for a quick, easy and FILLING breakfast. And when you think of pancakes, you might not think of quick and easy. Well, I promise that these are super easy to whip up, and you probably already have most of the ingredients in your fridge/pantry right now! The most appealing thing about these pancakes is the fact that they can be made right into your blender! I simply heat up my pan while taking 2 minutes to add the ingredients to the blender, and pour the batter directly from the blender. Pretty convenient if you ask me! To give my pancakes a little extra fiber boost, I like to add NOW Foods psyllium husk powder or ground flaxseed! I really feel like that added fiber keeps me full throughout the morning. Plus, a little added fiber is a great way to stay regular, which we know is so important! I am always on team fiber!
Here’s how you make them:
Ingredients:
- 1 ripe banana
- 2 large eggs
- 1/2 cup oats
- 1 tsp vanilla
- 1 tsp psyllium husk powder OR ground flax (by @nowfoodsofficial of course)
- Dash of cinnamon
Preparation:
Blend all ingredients in a high speed blender until smooth. Should only take about 30 seconds. Cook on a non-stick pan or griddle. Just be aware, if you’re using psyllium husk, work quickly. Due to the soluble fiber, it will seize up quickly. I find for the second round of ‘cakes I need to spoon out the batter onto the pan! Makes 5-6 small/med pancakes! Enjoy!.
