Super Simple Homemade Granola
Granola is one of the more simple things to make, yet for whatever reason, we resort to buying a store-bought option, rather than make our own. While I am all for supporting small businesses and buying local brands, it’s more satisfying to make your own delicious granola. Granola also gets a pretty bad rep for being too fatty or loaded down with sugar. However, the beauty of homemade granola is that you get to decide which ingredients to put in your mix! This recipe is a slightly different version of one my mom has been making for years. While it isn’t the sweetest, the optional added fruit gives the granola a pop of sweetness and varied texture. Add the granola to a bowl of fresh berries, top with almond milk, and there’s breakfast! Enjoy!
Ingredients:
- 2 C rolled oats (I buy the gluten free ones from Trader Joe's. They are inexpensive and come in a huge bag)
- 1 C slivered or crushed almonds
- 1 C pumpkin seeds
- ½ C sunflower seeds
- ½ C chia seeds/hemp hearts (I used both)
- 1 C unsweetened organic coconut flakes
- ¼ C honey or maple syrup
- 2 tablespoons melted coconut oil
- ½ tsp cinnamon
- Pinch of pink Himalayan sea salt
- Dried fruit of your choice: for this batch I did a few chopped dates, some dried mango, and freeze-dried strawberries from Trader Joe's
- 2 tbsp honey to drizzle on top before oven (optional)
Prep:
- Preheat the oven to 250F.
- Add all ingredients into a large mixing bowl. Stir until ingredients are well incorporated.
- Place granola on a parchment-lined baking sheet. Bake for 1 hour, stirring the mixture every 15 minutes.
