Garden Greens Pesto
This recipe was created as part of a paid collaboration with Sprouts Farmers Market.
I am so excited about this recipe, because it contains a hidden sneaky ingredient! Spinach! Adding spinach (or your favorite leafy green), is a great way to get in additional veggies and nutrients in your diet. We enjoyed this pesto on pasta, on chicken, and in my Pesto Turkey Meatballs! I hope you enjoy this pesto as much as we have!!
Ingredients:
1-cup basil
1-cup spinach 2 cloves garlic
½-cup Extra Virgin Olive Oil
½-cup Parmesan cheese or nutritional yeast
¼-cup pine nuts
¼-teaspoon salt
¼-teaspoon pepper
Preparation:
1. In a food processor, combine basil, spinach, garlic, Parmesan cheese, pine nuts, salt and pepper until finely chopped texture is formed.
2. Once basil, spinach, garlic, Parmesan cheese, pine nuts, salt and pepper are well incorporated, slowly add Sprouts Extra Virgin Olive Oil to food processor while machine is processing. This will ensure a smooth, blended emulsion of the ingredients, leaving your pesto creamy.
3.Add pesto to pasta and serve warm or chilled. Top with more Parmesan cheese, pine nuts and a squeeze of lemon.
