Cucumber Cabbage Sesame Slaw
Meet my new favorite salad! I can already tell this is going to be a staple for summer! I find regular salads get really old, but this salad is bursting with flavor and is a definite crowd pleaser. The thing that is so awesome about hearty cabbage, is in this salad it only gets softer and more flavorful with time! I love that this salad can be enjoyed immediately, or you can store it in the fridge in an air-tight container for 3-5 days! I love all foods Asian-inspired, so if youβre like me in that, you will absolutely love this delicious side! Serve on its own, as a side or as a topping to tacos and sandwiches! Enjoy!
INGREDIENTS:
4 mini cucumbers, or 1 large seedless cucumber
1/4 red cabbage
Juice of 2 limes
2 tablespoons sesame oil
1 tablespoon soy sauce
2 teaspoons honey
1 teaspoon onion powder,
A few dashes of your favorite hot sauce!
PREP:
Slice cucumber into thin rounds, and thinly slice the cabbage. Mix ingredients in small bowl, and pour mixture over salad. Let marinate for 1hr before serving. Best served chilled! Serve immediately or keep in air-tight container for 3-5 days.
