Grilled Chicken Satay Skewers with Peanut Sauce
I have always LOVED chicken satay skewers, but never really thought about making them until my roommate Jamie told me how she always enjoyed them as a kid. I mean, what isn't to love?? I must admit, I am SLIGHTLY (wildly) obsessed with the peanut sauce included in the recipe, and think I would honestly eat tree bark if I could slather this sauce on it. It's unreal. And really easy to make, throw all of the ingredients into a blender and blend until smooth. Ideal if you ask me. These chicken skewers are simple, tender and absolutely delicious. I served ours alongside a red cabbage, green apple and edamame slaw with ginger, mint and basil. A perfectly light and summery meal. I hope you love these as much as we do!
Ingredients:
For the chicken and marinade:
- Chicken breast (one breast per person)
- 1/4c soy sauce
- 1/4c olive oil
- 2 knobs ginger
- 1 knob garlic
- Juice of 1 lime
- Pepper to taste
For the Peanut Sauce:
- 3 tbsp peanut butter
- 2 tbsp sesame oil
- 2 tbsp lemon juice, lime juice or apple cider vinegar
- 1 tbsp Sriracha
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 clove garlic
- 1 knob ginger
- Water to thin the sauce to desired thickness
Prep:
For the chicken:
- Slice the chicken breasts into 1 inch cubes
- Marinate chicken in soy mixture for at least one hour.
- Once the chicken has marinated, place the cubes on skewers
- Cook chicken on grill for approximately 14 minutes (7 minutes on each side)
- Baste the chicken with marinade while grilling for additional moisture and flavor! Highly recommend :)
For the sauce:
- Place all ingredients in a blender, and blend on high until smooth.
