Birthday Cake Fat Balls
Ok so fun little fact about me, I actually don't have a big sweet tooth. I definitely crave salty/savory foods before I crave sweet. HOWEVER, I have always been a fan of birthday cake-flavored items. I know, not the most healthy or "most natural" flavor, historically speaking. We're talking Milk Bar Birthday Cake Truffles (linking them because they're too sinfully good not to) and Coldstone Creamery birthday cake ice cream. I think it is that artificial vanilla flavoring that brings me back to my childhood. Unfortunately, this flavor can't be completely replicated in THE most healthy fashion, but I'll take what I can get. This is where BuffBake Birthday Cake Almond Butter comes into play! Ok fine, it contains sunflower oil and cane sugar...but compared to Coldstone ice cream, BuffBake is the clear winner. I whipped together these balls when I had a craving for those incredibly unhealthy desserts (yes, it does happen. And yes, sometimes I do indulge on the good stuff). I happened to have all of the ingredients in my pantry, and voila! The balls were born!
In order to get that birthday cake flavor, I really suggest you use the BuffBake almond butter. I purchased mine at my local Wegman's, but it look's like they are in most GNC's and Vitamin Shoppe's (HERE is the BuffBake store locator). HOWEVER, if you're fine with just enjoying regularly delicious fat balls, by all means swap out their almond butter for one of your choosing. Similarly, if you don't have Pearl Butter, regular coconut butter will work JUST fine as your "icing". Throw in a little pitaya or raspberry powder, and you can dye yours pink too.
At the end of the day, I think as long as they look like birthday cake, you can call them birthday cake. Enjoy!
Ingredients:
- 3 tablespoons or 1 singe-serve packet of BuffBake Birthday Cake Almond Butter
- 1/4 cup raw almonds
- 1/4 cup raw pecans or cashews
- 1/4 cup coconut flour or shredded coconut
- 2 tablespoons melted coconut oil
- 2 tablespoons pure maple syrup
- 1 teaspoon pure vanilla extract
- Dash of cinnamon
- Pinch of sea salt
- 2 tablespoons of Pearl Butter melted for "icing" (feel free to sub regular coconut butter)
Prep:
- Combine all ingredients in a food processor until doughy consistency has formed. Do not over process! Once you see a ball has formed in your processor, you're probably good to go. Form into golf ball-sized balls. Should make about 12-15 balls. Pop balls into the freezer for 15 minutes.
- Melt your Pearl Butter/coconut butter in the microwave until runny. Drizzle on frozen balls (lol sorry). Store balls in the freezer for 3 months!
Say balls again.....balls.
