Simple Greens Salad
This salad has been one of my absolute favorites recently. Maybe it's because I have Spring on my brain, and my body is wishing for longer days and lighter meals (as great as roasted veggies are!). I am the type of person who likes and strives to have at least one serving of "leaves" aka salad a day. This salad is for those days when I don't feel like massaging kale and putting a lot of effort into it. Plus, I think arugula tastes great with almost anything. Here it is, enjoy.

Ingredients:
- 3 handfuls Arugula
- 1/2 Avocado
- 1/2 C lentils
- 1 tbsp Sesame seeds
- Lemon (dressing)
- Extra virgin olive oil (dressing)
- Parmesan (optional. Omit to make vegan)
- Pine nuts (optional)
- Kale microgreens (optional)
Prep: Prepping these ingredients do not take much effort, simply dump all the components into a large salad bowl. Mix. Enjoy
